Les canelés de saison | “Châtaigne” et “Daidai, Thé et Chocolat Blanc”

As the tree leaves change colors and the cold air gets cold, it feels like the beginning of winter already. There are reasons why broadleaf trees change the color of their leaves. In winter, the daylight hours get shorter, and they secure power for survival during cold winter by letting go of their colorful wide leaves which they needed to receive energy from the sun. The fallen leaves pile up on the ground and it helps to attract other living creatures to nourish the soil. The whole process of regeneration starts with letting go. Having only two months left in this year, we too should let go of what we no longer need and have room for new things to come in. Our seasonal canelés for this month, “Chestnuts” and “Daidai Orange, Tea and White Chocolate” are available from today, the 1st of November. Chestnut canelés are filled with chestnut paste and decorated with honey-preserved chestnuts. You can feel autumn in the rich flavor of chestnuts. Daidai Orange, Tea and White Chocolate Canelés are decorated with white chocolate ganache on top of the dough with tea leaves. Please enjoy the rich flavor in the bergamot aroma of earl gray tea leaves and the freshness of daidai orange.
