新緑がきらきら眩しい季節になりました。”夏も近づく八十八夜…♪” という歌は、初夏に見られる茶摘みの光景を歌った「茶摘み」という名の歌です。立春の日からかぞえて八十八日目であることからその名がついた「八十八夜」は雑節の一つで、今年は5月2日にあたります。この日に摘んだお茶を飲むと長生きするとも言われています。5月の季節のカヌレは「レモンとライム」と「ダークチェリー」が、本日5月1日(日)よりお目見えです。「レモンとライム」はライムの皮をちりばめたレモンとライムのジャムを中と上にのせました。ふたつが合わさったすっきりとした苦味と爽やかさがこの季節にぴったりの一品です。「ダークチェリー」は上にチェリーのコンポートをのせ、その縁に細かく刻んだピスタチオをあしらいました。コンポートの柔らかな甘さとジャムのほどよい酸味がぎゅっと詰まった初夏のカヌレです。
