Les canelés de saison | “Figues” et “Patate douce”

    It feels that the cool winds in the summer heat bring autumn already. Autumn in Japan is blessed with delicacies from the mountains and the ocean. A lot of ingredients are in the season such as Mushrooms, seafood, fruits, and rice. It may feel that foods are tastier now that the appetite that was lost because of the summer heat is finally back. We cannot help but feel grateful for the delicacies this autumn more than ever after all the heavy rains over this summer. Our pair of seasonal canelés for this month, “Fig” and “Sweet potato” are available from tomorrow, September 2nd. Fig canelés are filled with the red wine compote of figs in the red wine flavored dough. The popping texture of fig and refined afternote of red wine would be very enjoyable. The sweet potato canelés are with candied sweet potato inside of the sweet potato dough and decorated with the candied sweet potato and sesame sprinkled on top. The sweet potato fills your mouth with a soft luscious flavor.

    暑さの中に吹く涼しい風が秋を運んできてくれるようです。日本の秋は山や海の幸がとても豊富です。キノコや果物、魚介類にお米とたくさんの食材が旬を迎え、秋の味覚は美味しいものがいっぱい。暑さで落ち着いていた食欲がだんだん増してきて、食べものがよりいっそう美味しく感じられます。雨の多かった今年の夏を乗り越えた秋の恵み、感謝を忘れずにいただきたいものです。9月の季節のカヌレは「いちじく」と「さつまいも」が、明日9月2日(木)よりお目見えです。「いちじく」は赤ワインの生地の中に、赤ワインに漬けたイチジクのコンポートを入れ、上にものせました。イチジクのプチプチ食感と赤ワインの大人な余韻をお楽しみください。「さつまいも」はさつまいもの甘露煮をさつまいもの生地で包み、上にものせ、最後にごまを散らしました。さつまいものやさしい甘さがお口いっぱいに広がります。
