Les canelés de saison | “Ananas” et “Noix de Coco”

    August 3rd is the day of honey in Japan. It was established in 1985 from the pronunciations of 8 (hachi) and 3 (Mitsu). As we can see from the wall painting of honey picking on a cave in Spain from 6000 B.C., human and bees have a long history. There is even an English proverb that goes “The history of honey is the history of mankind”. We have been consuming honey for a long time in Japan as well. In the Heian era, honey was considered a luxury item and offered to the emperors. Lotus flowers, acacia or clovers, there are as many kinds of honey as kind of flowers. It is said that a honey bee can collect only one teaspoon amount of honey for its lifetime. This precious honey contains a lot of vitamins, minerals, amino acids and works for preventing fatigue or heatstroke for summer. It seems that the hot days will be continuing. Stay away from the heat and have a great summer! Our pair of seasonal canelés for this month, “Coconuts” and “Pineapple” are available from tomorrow, August 1st. Coconuts canelés are inspired by summer beaches with plentiful roasted coconuts mixed in the dough and sprinkled on top. Pineapple canelés have dried pineapples covered by white sweet bean paste inside, dolled up with homemade fres pineapple jam on top. This tropical, summery canelé brings out with the sweet, sour taste of pineapple.

    8月3日ははちみつの日です。「8(はち) 3(みつ)」の語呂合わせから、1985年に制定されました。スペインにある洞窟の壁画には紀元前6000年頃のはちみつ採取の様子が描かれており、蜂と人間の関わりが古くから存在していたことが伺えます。英語には「蜂蜜の歴史は人類の歴史」ということわざもあるほどです。日本でも古くからはちみつは食べられてきましたが、平安時代に宮中への献上品とされるほど貴重品とされていました。レンゲやアカシア、クローバーなどの花の種類の数だけはちみつの種類があり、一匹のミツバチが一生をかけて集められるはちみつの量はわずかティースプーン一杯だそうです。ミツバチがせっせと集めてきた蜜には、ビタミンやミネラル、アミノ酸などの様々な成分が含まれており、疲労回復や熱中症の予防にもなります。まだまだ暑い日が続くようですが、暑さ対策万全によい夏をお過ごしください。8月の季節のカヌレは「ココナッツ」と「パイナップル」が本日8月1日(木)よりお目見えです。「ココナッツ」は生地にローストしたココナッツをふんだんに入れ、仕上げにココナッツをまぶした夏の海を想わせる一品です。「パイナップル」はドライパインを白あんで包んだものを中に入れ、生のパイナップルからつくった自家製のジャムをのせました。パイナップルの甘酸っぱさが引き立つ、トロピカルな真夏のカヌレです。
